Hey, this is one of my favorite recipes to cook with leftovers. I hope you enjoy!



200g Cooked rice (brown, basmati or any rice you like) 

200g vegetables of your preference (Carrot, potato, courgette, broccoli, cherry tomato...)

2 red onions (cut fine slices)

3 cloves garlic (grated)

1 handful roasted nuts (I love cashew)

1 handful seeds (I like pumpkin)

(You can adapt all the ingredients amounts to your taste)

1 tbsp sesame oil

1-2 tbsp soy sauce

Lime or lemon

Cilantro or any herb you like


Salt and pepper


Cut all the veggies into thin slices so it will cook faster. Start by roasting them (the hard veggies first, and the soft ones later) in a hot frying pan with 1tbsp sunflower oil, until they get a nice golden color. Add some salt the start, it helps to bring out the flavors.

If you need, turn the heat to medium after 2 minutes so they can cook evenly. Reserve it for later.

In the same pan with some 1tbsp sunflower oil, you can roast the red onions in medium heat for 2 minutes and add the garlic. Put the onions and garlic to one side of the frying pan, and add to the other side of the frying pan 1 tbs sesame oil and the rice.

Let everything cook in medium heat till the rice is warm and crispy. 

You can lower the heat after a few minutes if you prefer the rice softer.

Add cooked veggies, and finish seasoning with salt, pepper, soy sauce, and lemon or lime juice. 

Serve with the seeds, nuts, chili & cilantro. Et voilà! Enjoy it!
